DIRECTIONS

Whisk the sugar, cornstarch, cacao powder, salt, and collagen together in a medium saucepan.
Slowly whisk in the milk until smooth.
Cook over medium heat, whisking frequently, until thickened and gently boiling.
Continue whisking for 1 minute, then remove from the heat.
Stir in the butter and vanilla until smooth.
Divide among six small jars or cups and refrigerate for at least 2 hours, until chilled and set.

I love adding my favorite protein powder from @marigoldfoodstx into my desserts because it works so well in baking. I decided to make a quick batch of chocolate chip cookies and they turned out great. The dough also freezes well so you can freeze the dough balls and pull out a few to bake when you’re feeling like it! Here’s the recipe

½ cup butter, softened
2 eggs
¼ c granulated sweetener
¼ c brown sweetener
1 tbsp vanilla extract
1 ½ cups almond flour
½ cup vanilla protein powder @marigoldfoodstx
1 tsp baking soda
½ tsp salt
½ c sugar free chocolate chips

Preheat oven to 350 and line a baking sheet with parchment paper.
Mix together butter and sweetener until combined, then add in eggs and vanilla extract. Whisk until smooth. Add in all dry ingredients and stir with a rubber spatula or spoon until almost combined. Then stir in chocolate chips
Divide dough into 12-24 balls depending on what size cookies you’d like
Place on baking sheet & bake for 10-12 minutes
