👇🏽✨Horchata Protein Pancakes✨
(High protein, gluten free breakfast)

ɪɴɢʀᴇᴅɪᴇɴᴛꜱ:
✰4 tbsp (30gr) @marigoldfoods horchata collagen (20 gr protein)
✰Cinnamon
✰1 tbsp monk fruit or coconut sugar
✰1 egg
✰¼ cup nondairy milk (I used chickpea milk but you can use any!
✰3-5 tbsp oat flour (GF if needed) (if you use collagen powder you might need a bit more)
✰Add your favorite toppings, I used nut butter & dark chocolate shavings!

ᴘʀᴇᴘᴀʀᴀᴛɪᴏɴ:
•In a bowl, mix all ingredients. Then heat a small sauce pan w some avocado or coconut oil. I made mini pancakes bc they’re very delicate!
•Pour mixture and cook for 3-4 minutes over medium/low heat on both sides, or until pancakes are cooked through.
•Enjoy with your fave toppings!😋

Dry bowl
2 cups all purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 & 1/2 teaspoons cinnamon
3/4 teaspoon nutmeg
1/4 teaspoon cardamom, optional
2 cups shredded zucchini, 1 large zucchini
Optional 1 scoop of chocolate protein powder. (Mine’s from Marigoldfoodstx - clean whey protein Discount Code: MOTHERHEN 10% off
Wet bowl
1/2 cup butter, (1 stick) melted
1/4 cup light olive oil or avocado oil
3/4 cup brown sugar, packed
1/4 cup Greek yogurt plain
2 eggs
2 teaspoons vanilla
Instructions
Preheat your oven to 350 degrees F. Line one 9×5 inch loaf pan with parchment paper, or grease well with butter.

Mix the dry ingredients. In a medium bowl combine the dry ingredients: 2 cups all purpose flour, 1 cup granulated sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon kosher salt, 1 and 1/2 teaspoons cinnamon, 3/4 teaspoon nutmeg, and 1/4 teaspoon cardamom. Whisk together and set aside.
Mix the wet ingredients. Add 1/2 cup melted butter (1 stick) to bowl.
Add 1/4 cup oil, 3/4 cup brown sugar, 1/4 cup plain Greek yogurt, 2 eggs, and 2 teaspoons vanilla. Whisk together until combined.
Shred the zucchini. Shred your zucchini using the side of your box grater with the largest holes.
Squeeze the zucchini. Once your zucchini is grated, place on a paper towel and squeeze it to get the water out. I like to lay a few paper towels on the counter, spread out the zucchini, then top with another layer of paper towels and press it down until both paper towels are soaked.

Add the zucchini to the bowl of dry ingredients and stir together. Add the dry ingredients to the wet ingredients and mix only until just combined.
Optional: If you plan to add (1 cup) chocolate chips now you can fold them in. Don’t over mix.
Pour the batter into the prepared pan. Top your loaf with a few of chocolate chips.
Bake the bread in the center of the oven at 350 for about 60 minutes. The bread is done when a toothpick or skewer inserted into the center comes out with no batter on it.
Store zucchini bread in a sealed container on the counter for up to 5 days.
