Low-Carb Sourdough Pretzel Bites

Ingredients
100g fed & active sourdough starter
1 cup almond flour
2 tbsp oat fiber
2 tbsp flaxseed meal
1 tbsp @marigoldfoodstx unflavored collagen powder (Use Code: DEB)
1 tsp xanthan gum
1 large egg
2 tbsp melted butter (plus extra for brushing)
1 tsp baking powder
½ tsp monkfruit sweetener
Coarse salt (for topping)
Baking Soda Bath:
4 cups water
2 tbsp baking soda

Instructions
1️⃣ In a bowl, mix almond flour, oat fiber, flaxseed meal, collagen, xanthan gum, baking powder, monkfruit, and salt.
2️⃣ Add sourdough starter, egg, and melted butter. Mix into a dough. If too dry, add a splash of water. If too sticky, add almond flour.
3️⃣ Cover dough and let rest for 1 hour to develop that tangy sourdough flavor.
4️⃣ Preheat oven to 375°F. Line a baking sheet with parchment.
5️⃣ Divide dough into 6 portions, roll into ropes, shape into pretzels, then cut into bite-sized pieces.
6️⃣ Boil water and add baking soda. Dip pretzel bites in the bath for 30 sec. Use slotted spoon to remove and place on sheet.
7️⃣ Brush with melted butter and sprinkle coarse salt.
8️⃣ Bake for 15–20 min until golden brown.
9️⃣ Brush again with butter (optional but highly recommended).
Serve warm with mustard or your fave low-carb dip!
