When you go Keto, some things like crispy chicken nuggets just seem out of reach. If you’re anything like me, you’ve tried all the recipes using almond meal only to be disappointed. While they taste ok, they’re just not crispy!
Tonight, while deciding what to cook for dinner, I spotted a half empty bag of pork rinds over on the counter. Hmmm…
Here’s what I did. The nuggets cooked up quickly, and were actually crispy! And, since I cooked them in the oven, it was a breeze to cleanup.
RECIPE
Step 1: Preheat oven to 450 degrees.
Step 2: In a gallon bag, or large bowl:
- Pork rinds – crush enough to make 3/4 cup
- 1/4 cup almond meal
- 1 TLB onion powder granules
- 1/2 tsp salt
- 1/4 tsp pepper
Step 3: Cut 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
Step 4: While you’re putting everything together, stick a baking pan in the oven.
Step 5: OPTION 1 TBL olive oil.
Step 6: If you are using breasts, you may want to add 1-2 TBL oil to the pan before heating it. With thighs, you won’t need the extra oil because of the fat on the thighs.
Step 7: Toss the chicken pieces in the pork rind mixture, covering all areas.
Step 8: Remove pan from oven, and place chicken in the pan. Return to oven.
Step 9: Cook 15 minutes, turn, and cook another 15-20 minutes.
This recipe is one I would like to try.
